Today I’m excited to be joining in with a fun Cinco de Mayo recipe collaboration with Madison of A Joyfully Mad Kitchen and Susannah of Feast + West. There are over 30 delicious appetizer, main course, dessert, and cocktail recipes for you to try! If you know me, you know I’m obsessed with all things Mexican food. I could eat Mexican food for every meal of every day. In fact, I had tacos for lunch, and we are going out for Mexican food again for dinner. #ihaveaproblem
The first week in May is always an exciting week for me for a few reasons.
1. It’s my birthday week!
2. It’s Cinco de Mayo week!
3. It’s offically the last month of school!
My sister and I both share an unconditional love for Mexican food. So we always plan to go to a fun taco place, or cook a yummy meal at home. For us, you simply can’t have a mexican meal without a margarita. You just can’t. So, when we cook up our own tacos at home, we bring margarita fixings as well. One of our favorite margaritas is the Watermelon Mint Margarita that I mixed up last summer. It’s yummy, not too sweet, and super easy to make.
This margarita recipe is not only delish, but it’s so quick to make. After I gathered my ingredients, it only took five minutes to throw these together. Definitely a good one to make for a large group of people. I can’t wait to have some friends over for a fun and yummy Cinco de Mayo celebration! These pretty margs will definitely make an appearance.
Ingredients:
4 cups of chopped watermelon
Juice of 3 limes
1/2 c tequila
1/4 c sugar
3 tablespoons chopped mint, plus leaves for garnish
The Steps:
Coat rims of margarita glasses with lime, then dip in sugar or coarse sea salt.
In a blender, combine all of the ingredients and pulse until smooth. Pour into glasses, garnish with a lime and mint leaves! If you’re not much of a drinker, you can totally still enjoy this tasty drink by substituting the alcohol for orange juice. Enjoy!
